Buying scotch fillet whole lets your team cut the steaks to suit the menu, or keep part of the piece for a roast. You’ll also see it called cube roll or rib eye.

For a steak special, weigh the usable meat after trimming before you divide it into portions. A target weight and a target thickness won’t always give the same result along the whole cut. Decide which matters most for your plate, then portion from there.

How many steaks will a whole scotch fillet give me?

Divide the usable raw weight by your target steak weight. For example, 3 kg after trimming gives twelve 250 g raw portions. That assumes all 3 kg can be used at that portion size; the actual joint, end pieces and your trimming will affect the result.

What can I do with pieces that don’t fit the steak specification?

Plan a separate use, such as sliced beef for a lunch dish, and record that yield separately. It helps you cost the matching steaks honestly without treating useful end pieces as either full steaks or waste.

Should I order a whole fillet for every service?

Base the order on your expected steak sales and any planned roast use, then check the supplied use-by date and storage instructions. A whole piece is useful when the kitchen has a plan for it; the half option may suit a smaller run.
