There’s no bone or skin to remove from this NZ chicken breast, so the bench work starts with the dish you’re making. For a crumbed breast, flatten it to an even thickness before coating. For wraps, cut strips that sit neatly in the filling; for a curry, keep the dice consistent through the batch.
If your team is doing the same cutting every morning, we can discuss supplying the breast as strips or dice. Bring us the size you use in the recipe so the prep starts where you need it to.

Forty portions at 150 g raw breast need 6 kg before any extra trimming allowance. This is a planning example, not a recommended serving size or cooked yield. Use your own portion and trial result for the final order.
Include the finished size you want on the plate and whether you need a whole breast or a cut portion. A raw weight on its own does not describe the shape of a schnitzel. Confirm the available preparation with our team.
